
Directions:
Heat oven to 320 degrees.
Mix together sugar, vanilla and eggs, slowly add in melted butter. mix in sour cream until combine. Then add in flour and baking soda. Add in fruit.
Place in lined cupcake tin, top with Streusel topping (see below) and bake for 13-15 mins or until golden.
Streusel:
1/2 cup flour, 1 cup brown sugar, 1/4 cup butter and 1/2 tsp cinnamon. combine all and mix until crumble consisency
Variations:
Coffee cake: omit fruit, add 1 1/2 tsp cinnamon, 1/2 nutmeg and top with a crumble mixture (crumble: 1/2 cup flour, 3/4 cup brown sugar, 1/4 cup butter, 1/2 tsp cinnamon mix only until crumble consistency)
makes about 24 muffins.

Heat oven to 350
Place warm water in a bowl. Add in sugar and yeast. Mix well and set aside for about 5-10 mins.
Next add in butter/coconut oil.
Add in flour 6 cups of flour and then salt. Mix with dough hook on stand mixture until dough comes off the sides, or until smooth. add in some of the 7th cup of flour as needed. if being done by hand you will need to knead the dough on a well floured surface until smooth.
Use an basting brush to brush one part water, one part egg over the surface of shaped loaf. score and bake until golden and Hollow sounding.
Place in a well oiled bowl (olive, coconut or butter) and let rise in a warm place for 40-60 minutes until doubled in size.
use one finger and press on dough. If the indentation springs back it is not ready, once the indent remains dough is finished rising and can be taken out and shaped into a loaf, round or rolls.
use a basting brush to put an egg wash ( one part egg and one part water ) mix over formed dough. place on parchment paper and bake until golden brown and 195 degrees internal temperature. ( about 40-45 mins for loaf or 25-30 mins for rolls)
makes 2 loaves or 24 rolls.

Add in flour, baking powder and salt. Once combined add in inclusion of your choice or leave plain. Bake for 12-15 mins. Sprinkle with crystal sugar before baking or ice with chocolate drizzle when cooled. Makes 8 scones.
